Irashaimasu! Food has always been an important part of my life...well maybe the most important since that is how I earn a paycheck. I have worked with all variety of Western food from simple American classics to fine French cuisine. And I like it well enough. But a number of intimate experiences with Japan, it's culture, it's language and especially it's food keep this cuisine close to my heart. The name of the blog, Umami, is a term in Japanese describing the 5th "taste" (after sweet, sour, salty, and bitter) The closest definition of umami in English would be "savory" but that doesn't come close to doing the term justice. Umami is food genius. It is a taste that occurs when flavors are combined using perfect ratios and technique. It is about tasting food the way it is meant to be tasted, on a deeper, more subtle level than what can be found in other styles of cooking or handling ingredients. And the Japanese were masters of this taste long before food science was even a concept to be studied. So let's learn together and bring Umami into your kitchen. Read, cook, learn, enjoy.
